Ingredients
2½ pounds fresh tomatoes (vine, plum or heirloom)
4 cloves garlic, peeled
2 small sweet onions, halved
¼ cup extra virgin olive oil
2 tablespoons Magic Creole Seasoning®
3 cups chicken stock
2 bay leaves
4 tablespoons unsalted butter
½ cup heavy cream

How To Prepare
Preheat oven to 450°F.
Wash, core, and cut tomatoes in half. On a parchment-lined baking tray, add the tomatoes, garlic, and onions. Drizzle with the olive oil and Magic Creole Seasoning®. Roast for 25-30 minutes or until caramelized, then remove pan from oven.
In a large pot over medium-high heat, add butter, bay leaves, tomatoes, onions, garlic and chicken stock. Bring to a boil, then reduce heat to a simmer and cook for 15 to 20 minutes.
Remove the bay leaves and using an immersion blender puree the soup until smooth. Whisk in the heavy cream and serve hot alongside our Turkey & Tasso Grilled Cheese or Salmon Magic Grilled Cheese!
