1 (¼-ounce) package unflavored gelatin
¼ cup seeded and finely chopped fresh jalapeño peppers

How To Prepare
Place the water, sugar, and gelatin in a small saucepan, stir to combine, and bring to a boil over high heat, whisking frequently to dissolve the sugar and gelatin. Reduce the heat to low and add the jalapeños. Simmer for 5 minutes, remove from the heat, and stir in the vanilla and mint leaves. Transfer to a small container and refrigerate until set.
