Makes enough sauce for 4 servings
Ingredients
8 ounces bottom round of beef or very lean hamburger, trimmed, minced or ground, pat dry
1 cup onion, diced to ¼ inch
1 cup celery, diced to ¼ inch
½ cup green bell pepper, diced to ¼ inch
1 (14.5 ounce) can diced tomato, no salt added
3 tablespoons Chef Paul Prudhomme's Salt-Free Sugar-Free Sweet Basil & Tarragon
1 cup fresh tomato, diced small
¼ cup beef stock, no salt added
1 tablespoon tomato paste
2 teaspoons Chef Paul Prudhomme's Salt-Free Sugar-Free Sweet & Spicy Seasoning
2 tablespoons olive oil
1 cup onion, diced to ¼ inch
1 cup celery, diced to ¼ inch
½ cup green bell pepper, diced to ¼ inch

1 tablespoon tomato paste
2 teaspoons Chef Paul Prudhomme's Salt-Free Sugar-Free Sweet & Spicy Seasoning
2 tablespoons olive oil
How To Prepare
Preheat a 3 quart pan or braising pan and add oil. When oil is heated, place celery, onion and bell pepper in the pan and sauté until onions begin to brown on the edges. Add minced beef and sauté until onions and beef are brown. Add tomato paste, canned and fresh tomatos, beef stock and seasonings. Cover and simmer for 15 minutes. Take off the lid to reduce until sauce reaches desired thickness (about 15 minutes). Remove from heat and serve over spagetti pasta.
