Makes 4 sandwiches
Ingredients
TASSO PIMENTO CHEESE:
2 tablespoons mayonnaise
3 tablespoons cream cheese
1 cup freshly grated extra sharp cheddar cheese
½ cup freshly grated smoked mozzarella
2 tablespoons chopped pimentos
2 tablespoons mild pepperoncini rings
2 tablespoons pickled jalapeno rings
½ cup diced Chef Paul Prudhomme’s Tasso
8 slices sandwich bread (white, wheat, seeded, etc.)
12 slices cooked turkey breast
4 tablespoons unsalted butter
2 tablespoons mayonnaise
3 tablespoons cream cheese
1 cup freshly grated extra sharp cheddar cheese
½ cup freshly grated smoked mozzarella
2 tablespoons chopped pimentos
2 tablespoons mild pepperoncini rings
2 tablespoons pickled jalapeno rings
½ cup diced Chef Paul Prudhomme’s Tasso
8 slices sandwich bread (white, wheat, seeded, etc.)
12 slices cooked turkey breast
4 tablespoons unsalted butter
How To Prepare
Tasso Pimento Cheese: Add the cream cheese and mayonnaise to a food processor and pulse until smooth. Add the remaining ingredients, except the tasso, and pulse until well mixed but small pieces of cheese are still visible. Add the diced tasso and pulse 3 more times to combine. Refrigerate until ready to use.
For the sandwiches, spread ¼ cup of the Tasso Pimento Cheese on each slice of bread. Top half of those with 3 slices of turkey each, then cover with the other slices, cheese side down. Heat a large skillet over medium heat and add ½ tablespoon of butter for each sandwich that can fit in pan. When the butter is melted, add the sandwich(es) and brown on one side. Remove from pan and add another ½ tablespoon of butter per sandwich to the pan. When melted, add the sandwich(es) back to pan (untoasted side down). Cook until browned on both sides and cheese is melted.
